Curried Chicken Salad Pita with Grapes and Pecans & Summer Gazpacho
When local corn and tomatoes hit the farmer’s market, I always stock up to make this delicious meal. Combine chopped chicken with grapes, pecans, scallions, light mayonnaise, plain yogurt, mango chutney, and curry powder. Stuff into whole grain pita pockets with romaine lettuce. Serve it with a fresh cold gazpacho soup with corn, tomatoes, scallion, parsley, avocado, and lime.
These recipes do need to chill before serving so this is the perfect meal to make ahead of time. Just leave the avocado out of the gazpacho and stir it in right before serving.
