Roasted Red Pepper Turkey Wraps with Creamy Lemon Asparagus Soup
Springtime has arrived and I have been anxiously waiting to make some of my favorite seasonal foods. First up this week was whole grain turkey wraps with roasted red peppers, sun-dried tomatoes, spinach, and feta. Served with a creamy asparagus soup with Parmesan and lemon. My kids can be a little finicky about the texture of roasted asparagus (crazy, I know) but they licked their bowls clean when I blended it into this soup.
The ingredients are pretty easy to keep on hand. I used a “natural” variety of turkey from Whole Foods but leftover oven roasted turkey or chicken would be even better.
