Easy Sweet Potato Drop Biscuits

What to do with those leftover baked sweet potatoes?  Try this easy drop biscuit recipe.  They can be frozen and reheated in the microwave for about 20 seconds to warm.  Serve with a salad topped with grilled chicken or salmon.  Or enjoy them with a bowl of bean and vegetable soup.

Sweet Potato Drop Biscuits

Ingredients (makes about 12 biscuits)

1 cup mashed sweet potato

4 Tbsp. water or low-fat milk

2 Tbsp. brown sugar or maple syrup

1 Tbsp. canola oil

1 tsp. apple cider vinegar

2 tsp. baking powder

1/4 tsp. salt

1 cup whole wheat flour (or whole wheat pastry flour)

pinch of nutmeg (optional)

Directions

Preheat oven to 400 degrees F.  Spray a baking sheet with nonstick spray.  In a large bowl, combine sweet potatoes, brown sugar, and apple cider vinegar.  In a small bowl, combine baking powder, salt, flour, and nutmeg (optional).  Add flour mixture to sweet potato mixture and stir until just combined.  Add 1-3 additional Tablespoons of water if needed to moisten the mixture.  Drop little spoonfuls on to the baking sheet.  Bake 15-17 minutes until lightly golden on the bottom.
