Cherry Yogurt Parfaits with Dark Chocolate Granola

As the weather starts to warm up, I think I may make a batch of these cherry yogurt parfaits with dark chocolate granola.  They were a big hit at our Culinary Club workshop and are perfect for a snack or dessert.  You can substitute other types of fresh or frozen fruit (strawberries, blueberries, mangos, bananas) or granola (e.g., Back to Nature Cherry Almond or Blueberry)

Cherry Yogurt Parfaits with Dark Chocolate Granola (serves 4)

Ingredients

10 oz. bag frozen (pitted) sweet cherries, thawed (e.g., Publix brand or Whole Foods 365).

2 cups of plain low-fat or non-fat yogurt (traditional or Greek style)

1 cup dark chocolate granola (e.g., Back to Nature)

4 tsp. honey (optional)

Directions

Spoon thawed frozen cherries and juice into four bowls.  Top with yogurt.  Sprinkle with granola.  Since plain yogurt doesn’t have any added sugar, sweeten slightly with a little drizzle of honey, if desired.
