Creamy Shrimp Rolls with Lemon and Dill

Looking for a light meal to beat the summer heat?  Try these delicious Creamy Shrimp Rolls with Lemon and Dill on Whole Grain buns.

Ingredients:

1/3 cup plain, nonfat Greek yogurt

3 Tbsp light mayonnaise

1/4 cup each chopped onion, celery, and green pepper

2 Tbsp chopped fresh dill

juice of 1/2 of a lemon (1-2 Tbsp)

1/8 tsp salt and ground black pepper to taste

1 pound cooked shrimp, peeled

4 whole grain hot dog buns, toasted

Directions:

In a medium bowl, combine yogurt, mayonnaise, onion, celery, green pepper, dill, lemon, salt, and pepper.  Stir in shrimp.  Chill for at least 20 minutes or until ready to serve.  Fill toasted hot dog buns with shrimp salad.  Try serving with fresh bell pepper strips, corn on the cob, and fresh cantaloupe.
