Easy 3 ingredient Banana Oat Pancakes

Looking for a low fuss breakfast idea? Try these simple Banana Oat Pancakes made with just 3 ingredients: ripe bananas, eggs, and oats.

In a medium bowl, mash 2 ripe bananas. Stir in 2 eggs that have been lightly beaten and 1/2 cup of dry oats (quick oats or old fashioned).

Warm a skillet over medium heat. Spray with nonstick cooking spray or a light glaze of butter.  Pour about 1/3 cup portions of batter onto the skillet and cook until the pancakes are firm around the edges and small bubbles form on top. Flip and cook on the other side until golden brown.

Serve plain or with a light drizzle of syrup.

For variety, try some of these tasty combos:

~ Top with sliced strawberries and pecans

~Top with blueberries and walnuts

~ Top with sliced peaches and almonds

~ Stir in a little bit of peanut butter to the batter before cooking. Top with extra banana slices.

~ Stir in a few mini chocolate chips to the batter before cooking and then garnish with fresh raspberries.

Serve with a glass of milk and enjoy. Leftovers reheat nicely in the microwave.
