One of my favorite childhood memories was eating a BBQ sandwich every year at our family vacation at the Outer Banks of North Carolina. The blend of the smoky BBQ sauce, cool cole slaw, and soft sesame seed bun was amazing.
Since I have lost my taste for heavy foods like that, I recreated this “new” Carolina BBQ sandwich and let me tell you… it does NOT disappoint!
You can also make this with lean ground chicken or turkey but I really prefer the tempeh. Not to mention it is cheaper than ground meat (less than $2 per package) and you can whip up a batch of this in less than 15 minutes. Serve with a side of vegetables. Leftovers are perfect for lunch the next day.
