Whole Grain Pita Pizzas

Looking for a quick meal?  Need to clean out some leftovers in the fridge?  Want to get the kids cooking in the kitchen?

No problem.  Try these easy whole grain pita pizzas.

Start with 100% whole grain pitas.  The Toufayan brand is available in most grocery stores for $1-$2 per 6-pack.  Whole Foods and Trader Joe’s also carry these.  Just check the ingredient list and make sure all of the flour is from a “whole” grain and not a “refined” grain.

Next, spread on some pizza sauce (homemade recipe below if needed) and a little bit of part-skim mozzarella .

Then top with your favorite toppings… or whatever leftovers you have on hand.

Whole pita and homemade pizza sauce can be stored in the freezer so you can whip these up any time.

The varieties are endless.  Today, we tried three versions:

~ Herb Chicken and Broccoli

Saute one chicken breast in a little bit of olive oil with Italian seasoning, garlic powder, salt, and pepper; let cool and chop.  Microwave the steam in bag broccoli (e.g., BirdsEye, Green Giant, Publix); let cool and chop.  Definitely a kid pleaser.

~ Sauteed Portobello Mushrooms, Caramelized Onions, and Arugula

Saute chopped portobello mushrooms and caramelized onions in a little bit of oil and sprinkle with a dash of salt.  Spread over the pizza and bake 8-10 minutes.  Remove from the oven and sprinkle with arugula.  This was my favorite hands down.  Fresh and flavorful.

~ Tri-color Pepper

Thinly slice red, orange, and yellow bell peppers and top.

 

Bake the pita pizzas on a baking sheet for about 10 minutes at 400 degrees F.  They also work in a toaster oven if you have one.  Serve with a small salad or side of vegetables.

Other topping ideas:

~ Chicken and Pineapple

~ Chopped Fresh Spinach and Marinated Artichokes

~ Tomato Basil (thinly slice the basil and sprinkle it over the pizza after it bakes)

~ Peppers, Mushrooms, and Black Olives

~ Black Beans, Red Onion, Red Bell Peppers, and Cilantro (sprinkle this on after it bakes)

 

Homemade pizza sauce

Combine 1 (15 oz) can no salt added tomato sauce, 1 (8 oz.) can no salt added tomato paste, 1 tsp. dried Italian seasoning, 1 tsp. sugar, 1/2 tsp. each garlic powder and onion powder, and 1/4 tsp. salt.  This yields about 2-1/4 cups of pizza sauce.  Store leftovers in the freezer.
