Ginger Lime Tilapia with Fresh Pineapple Salsa

Need a quick weeknight meal?  Try this easy Ginger Lime Tilapia with Fresh Pineapple Salsa.  Just sprinkle fresh lime juice, ground ginger, salt, and pepper over tilapia or another mild white fish and bake it in the oven.  While the fish bakes, sauteed yellow squash and zucchini with sun-dried tomatoes and Italian seasoning until lightly golden.  Serve with a side of quinoa.
