Grilled Pineapple Fruit Salad with Coconut
We just broke out the grill this weekend and enjoyed grilled salmon, grilled vegetables, and farro salad. But the real treat was this Grilled Pineapple Fruit Salad for dessert! The ingredients can vary based on what you have on hand but this was our favorite.
Ingredients:
1 whole pineapple, peeled and cored (available at Publix in the produce section)
2 bananas
2 cups chopped thawed frozen or fresh mango
1 cup strawberries, sliced
1/4 cup shredded coconut
Directions:
Lightly oil grill. Slice pineapple crosswise into 1/2 inch slices. Grill pineapple for a few minutes on each side until lightly browned. Let cool slightly and chop. Combine in a large bowl with remaining fruit and sprinkle with coconut. Serves 6-8 (or 4 in the Frazier household).
