Farro with Cucumbers, Lemon, Feta, and Parsley
Looking to sneak more whole grains into your diet? Try this easy farro salad with cucumbers, lemon, feta, and parsley. I used a quick cooking variety of farro that I purchased at Trader Joe’s for around $1.50. It only takes 10 minutes to boil and then toss with your favorite ingredients. Farro is a variety of wheat that is really light and fluffy. If you can’t find it, this salad would also work well with other whole grains such as quinoa, whole wheat couscous, or brown rice.
We broke out the grill this weekend and served this cold salad with grilled fish and vegetables.
Ingredients:
1 pouch of Trader Joe’s Farro
1 large cucumber, diced
1 red pepper, diced
1/2 cup sun-dried tomatoes, roughly chopped (I used smoked sun-dried tomatoes for more flavor)
1/4 cup freshly chopped parsley
1/3 cup feta cheese
juice of 1-2 lemons
2 Tbsp. olive oil
sprinkle of salt and freshly ground black pepper
Directions:
Bring a medium pot of water to boil. Add farro, lower to medium heat, and simmer for 10 minutes until tender. Drain in a colander and rinse with cold water. In a large container, combine remaining ingredients. Chill for at least two hours. Serve with fish and vegetables.
