Baked Blueberry Banana Oatmeal

This is the perfect dish to make at night so you can enjoy the leftovers on busy mornings- just reheat them in the microwave.  Baked bananas and blueberries fill your kitchen with an amazing aroma!

Ingredients

4 bananas

1 Tbsp. ground cinnamon

1 (16 ounce) bag frozen blueberries (~3 cups)

1 Tbsp. maple syrup, agave, honey, or brown sugar

2 cups old fashioned oats

1-1/2 cups skim or 1% milk

pinch salt

1/4 cup chopped almonds or walnuts

Directions

Preheat oven to 375 degrees F.  Spray a 9×11 inch baking dish with nonstick cooking spray.  Slice bananas over the bottom of the dish to cover it.  Sprinkle with cinnamon and bake for about 15 minutes.  Remove it from the oven and sprinkle the frozen blueberries on top and drizzle with sweetener of choice.  Spread oats over the blueberries, pour in the milk, and sprinkle with a pinch of salt.  Press the oats down so they are submerged in the liquid.  Bake for another 15 minutes or until the oats and blueberries are cooked through.   Sprinkle with chopped nuts if desired.  Yields 4-6 servings.
