Smashed Chickpea and Avocado Sandwich with Cilantro and Lime

 

This is one of my favorite plant-based sandwiches.  Rinse and drain canned chickpeas.  Smash them and ripe avocado with the back of a fork.  Add finely chopped cilantro, red onion, the juice of a lime, and a little salt.  Layer with your favorite sandwich toppings (fresh spinach leaves, tomato slices, fresh sprouts) on a hearty whole grain bread.  Serve with a fruit salad for the perfect spring time lunch.
