Zucchini Frittatas

These are amazing!  My goal is always to make these at night and store them in the refrigerator for a quick grab and go breakfast.  Just enjoy with a piece of 100% whole grain toast and whole fruit.  Unfortunately, they are usually devoured in my house as soon as I make them.

Note to self… double the batch next time and hide them from the kids.

Zucchini Frittatas (serves 4)

Ingredients

1/2 cup grated zucchini

4 eggs

1/4 cup finely diced onion

1/3 cup shredded light cheddar cheese (such as Cabot’s 50% reduced fat)

salt and freshly ground black pepper

Directions

Preheat oven to 400 degrees F.  Spray a 12 cup muffin tin with nonstick cooking spray.  Place zucchini in a clean towel or paper towel.  Squeeze the water out.  Combine zucchini, egg, onion, cheddar, salt, and pepper.  Fill each muffin cup up halfway and bake for 15-17 minutes until golden.
