Fennel Apple Salad
Craving something cool and crunchy? Try this simple salad of fennel and apples.
Never tried fennel before? Check out this video. Fennel is a vegetable that is light, and crisp, and crunchy. The flavor is very mild with a tiny hint of black licorice. It can be eaten raw, or braised with tomatoes, or roasted with other vegetables.
Ingredients:
1 head of fennel, thinly sliced
2 red apples, cored, and thinly sliced
splash of extra virgin olive oil
splash of apple cider vinegar
chopped fronds from the fennel (for flavor and garnish)
Directions:
Combine all ingredients and enjoy. You can make this ahead of time or leave it in the refrigerator for a quick snack. Just be sure to add the apple right before serving so it doesn’t brown.
